ELABORATION
Natural spontaneous fermentation, without added sulphates, in open stainless steel tanks with temperature regulation.
Pellicular maceration of 12 to 14 days with manual punching down twice daily and one final délestage.
AGEING
50% in tanks with bâtonnage (lit. stirring settled lees) and micro-oxygenation.
50% 12 months in 225-litre American oak barrels with maximum of 20% new barrels.
THE WINE
Deep purple. An intense aroma of red fruits, with a balsamic and spicy touch. A surprise to the palate for its freshness, density and body. Rich and full.
